One of my favourite salads. Simply love it for it’s fresh, clean flavours and crunchiness, along with the tangy, slightly sweet and spicy dressing.
Ingredients:
1 small green papaya, finely sliced
1 small red onion, finely sliced
1 cup bean sprouts
1 tbsp. chopped fresh cilantro or coriander
1 tbsp. chopped fresh mint
2 tbsp. roasted peanuts, crushed
1 tsp. toasted white sesame seeds*
1/2 cup finely chopped green onion
1/2 cup finely sliced or shredded carrots
1 Thai red chilli, finely chopped (or a jalapeño)
For the dressing:
Juice of 1 lime
1 tbsp. soy sauce
1 tsp.honey
A few drops of toasted sesame oil
A few drops of fish sauce (optional)
1 tsp. Worcestershire sauce
1/4 tsp. white pepper powder
Salt to taste (remember, soy sauce also has salt in it)
1 star anise
Combine all ingredients in a small bowl for the dressing. Mix well and keep aside.
In a salad bowl, combine the papaya, veggies and herbs. Add the dressing and toss well. Garnish with roasted crushed peanuts and toasted white sesame seeds. Serve chilled.
* in a small pan! add white sesame seeds. Dry roast for a few seconds, once they start to crackle, turn of heat, be careful not to burn them.
