‘Tis the season to be jolly, tra-la-la-la-la! The festive season is on in full swing and Christmas cheer is in the air. The holidays are just round the corner and this festive vibe is infectious! Good food and drink are definitely top on the list.
Cranberry, delicious and tart, the ultimate Fall/winter star ingredient and favourite in every dish or drink. Coupled with fresh apples and ginger. The result- a fresh cranberry and apple drink, infused with fresh ginger juice. A double- duty refreshing cooler, which can be enjoyed as a healthy juice for breakfast. Cranberries are super loaded with antioxidants and drinking it’s juice has numerous health benefits. And later on in the evening, enjoy it as a delicious cocktail 🙂
Servings 4-6
For the juice:
Fresh cranberries- 2 cups or 8 oz.
Sugar- 3/4 cup
Water- 2 1/2 cups
Organic apple juice or freshly squeezed apple juice- 2 cups
Fresh ginger juice- 1 tbsp.
In a saucepan, place the cranberries, sugar and water. Turn the heat on medium-high and let simmer for about 5-7 minutes, until the cranberries start popping. Remove from heat and cool. Blendwith a hand blender or in a food processor. Strain the juice through a fine mesh sieve. Pour into a jug or large container. Add the apple juice. In this case, I made my own fresh juice- add 1 diced apple and 1-2 cups water in a blender and blend. Strain the juice through a sieve. Add freshly squeezed gingerjuice. Grate about a 1 inchpiece of fresh ginger and squeeze the
juice out with your fingers. Mix all the juices week and chill in the refrigerator. Pour chilled juice in a glass when ready to drink.

For fun, first I frosted a glass with sugar. Dip the rim of the glass in a small saucer with lemonor lime juice or water. Spread sugar in a clean plate. Place the glass on the frosting, twisting slightly, to ensure you get an even coating.
Pour very chilled juice in a cocktail shaker. Add an ounce or a measure of vodka and a splash of lemon or lime juice. Shake well. Pour carefully into the glass, careful not to dislodge the frosting. Enjoy!
